  • 4 eggs 
  • 1/2 zucchini, diced 
  • 1/4 of a capsicum, diced 
  • Handful of spinach, chopped 
  • 1/4 cup grated cheese 
  • Season with salt and pepper


  1. Preheat oven to 180 degrees.

  2. Spray oil on a muffin tin.

  3. Place mixture in the tins and bake for 30 minutes.

  4. 4 eggs make 8 muffins.
