Bircher Muesli Breakfast Bites


  • 100g rolled oats
  • 30g cashews
  • 35g dried apricots
  • 10g shredded coconut
  • 60ml apple juice


  1. Chop up the apricots into small pieces
  2. Add all the ingredients together in a bowl and set in the fridge for 40 mins
  3. Add the ingredients into a blender, and blend for 10 seconds
  4. The ingredients will seem dry, however its firm enough to mix into a ball as it forms a dough like texture when squashed together
  5. Roll into 14 even balls and refrigerate before serving
